But not just any chocolate.... the really good stuff!
As you know I work very closely with the Real Food Source in developing recipes for them and creating ebook's with them. Our relationship was founded back in early 2012 when we were both young companies with a shared ethos of 'real food'. I bought their products back then and still do to this day. The Real Food Source is a company I fully support and would have no hesitation to recommend to others.
So, let's cut to the chase.... chocolate!

But as a quick overview, this chocolate is pure organic 72% dark chocolate made from just 3 simple ingredients: Organic cocoa liquor, organic cocoa butter and organic unrefined cane sugar.... and absolutely nothing else!
These chocolate bars are great for simply savouring as they are but due to the high cocoa butter content this chocolate is actually a 'couverture' (high cocoa butter content chocolate). This results in a smoother, creamier and more refined experience compared to low cocoa butter content chocolate... this chocolate makes for the perfect baking chocolate with it's ability to be melted and tempered with ease. I LOVE IT!
Here are a few recipes I've made for them with this chocolate in the past (along with many of their other ingredients) none of these recipes require any cooking... just a little melting!

Chocolate crackles... simple melt the chocolate (and use instead of cacao liquid and stevia)
Chocolate tiffin fridge slice... one of my all time favourites!
Crunchy melts... the crazy simply way to crunchy chocolate bites!
Chocolate coated truffle balls.... I posted a variation of these on my blog, my go-to treat of the moment! (I have so many requests for these at the moment!!) you could drizzle of go for the full dip coating!
Just to treat you, I have posted the truffle ball recipe here... this was the almond version that I made for Real Food Source. The links are the ingredients I used from Real Food Source, but you can easily use you own nut butters and syrups.
Recipe: Nutty choc truffle balls
Ingredients
- 3/4 cup blanched ground almond flour
- 1 cup almond or cashew paste
- 1 -2 tablespoon coconut syrup
- 12 pitted dates (this is based on deglet noor dates but if using larger medjool dates reduce to 7 dates)
- 1/2 teaspoon ground cinnamon
- 1/4 tsp salt
- 1/4 cup cocoa powder
- Coating: 100g (1/2 bar) dark chocolate to coat
Method:
Soak the dates in hot water for 5 mins and then drain. In a food processor, mix all the truffle ingredients together to form a thick paste, it should be sticky but not too sticky to handle.
Using your hands, roll into walnut sized balls and chill until they are a little firmer.
Melt the chocolate and using a toothpick dip the firm truffles into the chocolate to coat fully, or just hold with fingers and dip half the truffle and add a drizzle to the top once laid out on a plate or parchment to set.
These don’t need to be refrigerated and will be a little softer at room temperature. Eat within 3 days.
