'Student Spotlight' Hedgehog balls
Today we have the second edition of my 'Student Spotlight' showcasing the thougths and recipes of my fellow IIN students (see the original intro post here).
Today I would like to introduce Teniel Moore, she says this is a very popular recipe and every time she makes it people always want the recipe.
She also noted that whilst she uses raw honey a vegan option such as coconut nectar can easily be substituted.
Just going by the name alone I already love this recipe!
Over to you Teniel...
Recipe: Hedgehog Balls
"These are a delicious snack you can whip up in no time. Plus no cooking involved makes these even better. Kids usually love this recipe also."
Ingredients:
- 4 fresh pitted medjool dates
- 1 heaped tsp of peanut butter or nut butter of your choice
- 1/3 cup of walnuts
- 1/3 cup sunflower seeds
- 1/3 cup of macadamia nuts
- 1 tsp of raw cacao powder
- pinch of himalayan salt
- 1 heaped tsp crunchy buckwheat (I sprout mine, then dehydrate it to make it crunchy)
- 1 tsp of coconut nectar (or raw honey, using raw honey will not make this vegan)
Put all the ingredients in your food processor and blend until the mixture starts to form a ball. I like to leave the mix still quite chunky as this creates a great texture when you eat it.
Roll into balls and keep in the fridge. Enjoy
'Spotlight' Interview:
1- What first drew you to study with IIN?
A number of health crusaders I follow had completed the IIN course. At the time I was searching for a course that would offer me more knowledge on health and nutrition. And a program that was flexible and able to fit in with my life, which is what I needed.
2- How has your life changed since becoming a health coaching student?
Since starting my health coach training in September 2013 Its opened up opportunities to meet so many other wonderful like minded people who are also passionate about health and seeing others breakthrough in their lives.
Its taught me that my relationships, spirituality, exercise & more are just as important as what I eat for over all health.
3- What do you hope to take away into the world and how do you plan to help others once you graduate?
I really want to work with mothers who struggle with feeding a family healthy whole foods. I am a mum and I know the struggles us mothers can face making this happen on a day to day basis.
Im also passionate about gut health. And would love to help women with digestive issues like leaky gut.
4- Being a ‘wellness crusader’ what one thing would you wish to change about the world?
To make organic foods cheaper and more accessible to everyone. So we all can benefit from fresh organic produce straight from the farm.
I would also love to see more emphasis at school on teaching kids about nutrition and eating whole real foods to set them up for life.
5- What would you choose for your 'final meal on earth’?
This is a very hard question. Its too hard to pick just one thing. Maybe a healthy feast from around the world. I love the flavours of thai, vietnamese & indian food. Topped off with a delicious raw dessert.
